What kind of beets are you talking about. Regular beets take about 50 days to maturity not 300I planted beets from seed. They take about 10 months to reach maturity. Are these safe to eat? Thanks.
Being safe to eat and able to eat is the question. I am sure they are safe to eat but with 300 days in the ground I'd bet it will be like trying to eat a golf ball. They're regular beets. I don't have the package to know the exact type. Thanks.

The Dutch have a delicacy whereby hard-boiled eggs are pickled with beetroot: https://www.allrecipes.com/recipe/45157/quick-pickled-eggs-and-beets/Absolutely, yes. I normally plant ours in Sept. and harvest around March. We like them pickled...delicious, easy to grow and loves cooler temps even down to below freezing. Enjoy!
