So I was going to plant cover crops over
The winter (daikon radish, crimson clover, and buckwheat) and then till them under in the spring before planting. But I now am expecting a baby right around the time of spring planting, so I was wondering…can I leave the cover crop in from now until next summer when I’ll get ready to plant a fall garden, or is that too long to leave it in the ground?

The only problem I can see with that is if any of what you planted for cover goes to seed before you get to work it next summer.

Daikon and buckwheat can reseed themselves, but both will be frozen back this winter likely before reseeding and not return in spring.

The crimson will likely come back in spring and an easy fix might be to have someone mow that area when it looks like any are going to seed next summer.... assuming you don't want it in the garden.
