Hello! Do I NEED seeds to grow wheatgrass or can I purchase a bundle of grass from the grocery store and plant it? And will it spread or only grow upward?

No, you cannot buy a bundle of grass and plant it. You must have seeds. All wheatgrass is, is sprouted wheat seeds, the same wheat seeds that bread or flour is made from.
