If Pineapple thyme exists it must be exceedingly obscure. However, do check out Pineapple Sage (Salvia elegans), native to Mexico.
Its sweet, fruity leaves can be used to flavour drinks or preserves. It can be grown from seed or cutting, and there are several cultivars available, including 'Elk Sonoran Red', 'Frieda Dixon', 'Golden Delicious', 'Honey Melon', and 'Tangerine'.

That must be it then, thank you! I had some once and intend to have that flavor in the kitchen again!
