I order a few thuja trees that arrived today but the planters I'm putting them in don't arrive for another 10 days. The roots are wrapped in burlap then wrapped in plastic. How should I care for them until the planters arrive? Should I remove the plastic surrounding the burlap? Thanks!

Yes, I would remove the plastic and keep the burlap moist but not soggy around the roots until the containers get there. There shouldn't be a problem at all and nothing to worry about.
