Hi all - I've got some Eryngium/sea holly in the garden that looked pretty great and purple for a month or so, but turned crispy and dead. Was wondering if it's best to cut back the dead stalks and flowers to promote additional growth, or just it let it sit and naturally decompose? Not really loving the crispy look it's giving right now.

There are two different ways you can prune your Sea Holly. One way like cpp said is just dead head the flowers. It may be too late in the Season to regrow flowers from new vegetation.
The other way is to remove the whole plant leaving a few inchs above the ground. The main reason for removing the whole plant, which has a lot of dead-headed stems, is that it doesn't look very good all winter.
