Should I leave dirt around base of fruit trees?

I heard you should not have dirt around the base of the fruit trees so they can breathe. so just leave about 1 foot from the base of the fruit trees bare (aka expose roots system)

is that correct?

No. If the roots are exposed to the hot sunshine your trees will die. You should however keep the area around the trees free from weeds and grass.

I must disagree with @Tetters. You must have the root flare exposed or your tree will develop all kinds of problem in the coming years. Google root flare for a lot more info.
