I am moving across country in the U.S. and would like to take some of my special lily of the valley plants with me. Should I dig up the pips, make sure they are dry, and store in zip lock bag?

Welcome @SSantulli

Yes, its best done when the plant is dormant. I have some I transported from my Grand Mother's garden over 1000 miles away and they have thrived for decades and provided great memories.

By the way, the matter is poisonous so handle with care.

not a zip lock bag, that closes in possible moisture, and or the need to breath. Just a box with straw is fine. they are very hardy to begin with. But If I were going to do it, I would pot up the roots in soil that way when I got to my destination just put the pots outside until I was ready to plant them. Moving ect. so many other things to deal with. Pots sitting on the side waiting is better.
