Those look like some healthy eggplants right there. I really wish that I could have something like that on hand. I have always loved eggplants, especially as a substitute for meat, but I just never seem to buy it as much as I should. Those ones look perfect though, so I hope those are enjoyed.

Nothing like eating the veggies/fruities grown in our own gardens. But the pain is - we see them grow for weeks, pluck and consume in 5 minutes! Gone!
