I've been doing something like this for years.... using my unused stored onion bulbs as a base and without soil. When the length of sunlight starts increasing in about Feb. they naturally start producing leaves and green onions. Really no work required.

Green onions are easier than that, buy some from the grocery store and plant them.

I started with one bunch maybe 7 years ago and now have 350 plus that are reaching 3 feet tall and an inch diameter. Every few years I thin them and move them to fresh soil. No other work required.
