The plant Arabidopsis thaliana (Wikipedia URL) was chosen to be grown in lunar soil from the Apollo missions. Arabidopsis thaliana is a small flowering plant. It has had its entire genome sequenced, and being the first plant that has had it's entire genome sequenced, that's why it was chosen.
