Sweet potato fries with a little olive oil from the air fryer and a bologna sandwich that will have BBQ Pringle chips stuffed into it. Sunday comfort food lol.

A twist on Canadian poutine. Fries cooked from frozen, Monterey Jack cheese, chicken pot pie instead of gravy poured over it. Added some jalapeno slices from the garden and some herbs. Lots of salt and pepper. This will be enough to fill me until tomorrow at this time. I'll go for a walk around tonight and stop for a coffee.

Sour kraut day. Had some fairly heavy rain the other day and about 5 heads ruptured. Going to shred, salt and crock them today.

Also, the whole heads I did a few weeks ago have softened enough that I was able to massage them and fit them both in one crock. I'm thinking another month or so until ready to wrap.

And looking like potential for another 4 quarts of tomato sauce today. Plus a variety of peppers, jalapeños and hot and mild Hungarian. Probably a pint each.

Smoked a hind quarter of pork today, lots of brown sugar/apple cider injections. Sliced it up and put most in the deep freeze, kept some slices for the next few days. It's so much cheaper than buying sliced ham and will be used for pea soup and lots other things.

Smoker or oven, I definitely recommend a meat syringe. Anything from apple juice to brandy.. inject the meat!

I like real ham as opposed to lunchmeat processed stuff. So, we'll buy a ham so I can make sandwiches. Safe the bones for making stock.

As for pulled pork or ribs, I like a dry rub and let the diner pick a sauce if desired.

I'm kicking myself.. I was so ready to clean up and finish that I tossed the bone and fat. I usually make pea soup with it. Impatience.

Grew up in post war austerity with an elder brother, I still always leave a clean plate.
I'm 6' 240lbs.. I clean my plate and anyone else's who can't finish their meal lol!. But there is always new food the next day so I don't always save stuff.

We're camping this weekend. Brought the steamer, corn, red taters and 8 dozen clams. Dinner for tomorrow.

Now we'll see how we sleep with the angry squirrels bombarding us with acorns all night. They've fired a couple salvos already.
