Actually, I love to cook, but lately, because it's summer, I've started eating more raw vegetables and fruits. This way, I feel how much more my body is filled with vitamins, and with the help of Pharmacy B2B, I can easily replenish my home supply of various supplements. Therefore, some simple recipes from vegetables and fruits are now my priority.

10.5 more quarts last night.

Got enough hot peppers to make probably 2 quarts of pepper rings and enough pickles for 2 quarts of dill chips. Probably this weekend.

Didn't get to the above but did put 2 heads of cabbage in crocks and about 2 quarts of pickles in a crock. I expect to jar and refrigerate the pickles in a week. The cabbage will hang out for 6 to 8 weeks.

I found a story about an old world recipe for stuffed cabbage that requires fermenting whole heads. You then wrap the meat with a leaf of sour kraut.

I’ve been learning to preserve better and eat more intentionally since being diagnosed with insulin resistance last year. I started combining that with real, home-grown food made a huge difference in my energy and focus.
Lucky you, to find out you were insulin resistant in time to change your diet. I found out I was insulin resistant, too after having a lot of health problems late in life. So I started doing intermittent fasting daily and cut all the sugar from my diet. Wow what a big difference fasting and no sugar made in my life.

Some lunch meals from the garden. I robbed some potatoes. The tomato slice covering the slice of toast is Cherokee Purple. And some zucinni with a coating of fish crisp. All was done in the air fryer.

Looking for cabbage recipes, I'm having a bumper crop this year. Already have 5 heads for making stuffed cabbage and 4 heads chopped sautéed with onions and frozen for quick cabbage noodles. Looking at 4 or 5 more heads to make some sour kraut. But I'll still have 4 or 5 heads to do something else with.

Need something to can or freeze.

Plus 5 heads of purple cabbage but I got ideas for those. A cabbage slaw with carrots, onions celery dill caraway and a vinegar oil sugar brine. And a sautéed style, mostly the same but adding beer and apples for a hot side dish. These will be canned.

Today’s meals have been simple but really satisfying! For breakfast, I had a warm bowl of oatmeal topped with fresh berries—it’s quick, healthy, and gives me energy for the morning. Lunch was a grilled chicken salad with lots of greens, cherry tomatoes, and a light vinaigrette, which kept me full without feeling heavy. 3 quarts of tomato sauce yesterday. BLTs the other night.

And I'm trying a quart of kimchi since I had 2 ruptured heads of cabbage to use. Oh, and momma made some egg roll filling but we don't have wraps!

5qts of spaghetti sauce today. We did buy tomatoes at the farm stand, $6 for a peck. Chopped, cooked down and strained yesterday. Seasoned and simmered this morning.

Did chicken broccoli Alfredo yesterday with the kids. Steak and baked tonight for us.
