Cutting back grasses

Good afternoon

A couple of years ago I had two large flower beds installed and the gardeners who did the work come back regularly to carry out pruning, cutting back etc.... I want to take ownership of this (they are expensive and take advantage of my general ignorance)

So, my first request is, when should I cut back the grasses in this picture, and how far back should I go?

Most grasses are perennials and die back in the fall and winter. They will regrow in the spring. I can't tell exactly what variety of grass that is but I would wait until about mid February and cut it almost to the ground. There should be a clump out of which the new grass will grow.
