My cherry tree has multiple big splits in the bark with it peeling off. It also has a few sores that’s are oozing sap. Some of the branches are dying. What should I do to fix this?

Take some pictures. Not sure its anything more than a mature tree dealing with summer issues based on your description. I have a 20 plus year old one out front that fits your descriptions and I literally had a limb break last week.
