All I can find online is people growing them to attract deer. Can you eat them? I bought the seeds and grew them without doing much research and I have so many cowpeas now 😅

They have high levels of tannins, saponins, and lectins, which can be harmful or even toxic to humans if consumed in significant quantities.

Better to let the deer have them and grow pink eye purple hull cowpeas for something delightful for humans.

If you soak them over night you can cook them and eat them. Some people still eat them and use old-time cooking methods. I love all black eyed peas and would eat with the deers if I saw a patch.

There are a lot of YouTube videos on cooking them. But even if you don't eat them or feed them to deer, they make a good cover crop to build your soil.
