A 20 pound local grown watermelon was purchased and processed into 7 liter jars of pressure canned juice. Only the thin green skin was removed and the rind utilized, which is touted to have a quantity of nutients. The juice was pressure canned at 15 PSI for 15 minutes for long term storage at room temperature. Annotated pictures depict the process.
