Green lentils are a fine food used in various recipes. Each lentil is enclosed in a hull, which is best removed to enhance any recipe. Method is to soak in cold water for about three hours, rub the lentil between the hands and pour off the skins. About five rinses is sufficient to remove all the hulls.These common lentils cook in about 15 minutes in boiling water. I use for making tempeh or simply add them to various recipes.

Lentil fermented 40 hours. Notice the dark areas. This is where some skins were not removed and the mycelium cannot penetrate. This indicates that complete skin removal must be completed for perfection. The tempeh is still good but not perfect.

I love lentils and cook them often, here is another case of having to give it up to modern tech to get the final product.
