Looks really tasty! Have you ever tried doing 3 cup tempeh? I've made 3 cup tofu many times - it's also called San Bei Tofu. The 3 cups are equal parts soy sauce, toasted sesame oil, and shaoxing wine (or fortified wine). It's delicious!

Eat tempeh daily for breakfast usually. Make soy and or chickpea about once per week a half a liter of beans. I am now working on lentil tempeh. Both the soy and chickpea are always perfect.

I played with tofu considerably. It has been superseded by tempeh due to tempeh being fermented. Also the whole bean is utilized using tempeh.
