Five celery plants in pristine condition were harvested and made into 10 liters of pressure canned juice.Total weight was about nine pounds. The processed juice was canned at 15 PSI for 15 minutes for long term storage at room temperature. Annotated pictures depict the process.

This is my first attempt at processing celery into juice by itself. Of course, it has been used in mixture juice. It was a case of use it or let it disintegrate in the garden. At first look I am more than pleased with the result.
